Ingredients:
- 1 lb (16 ounces) Raw Shrimp, Peeled and Deveined
- 1/4 Cup Bob's Red Mill Organic Coconut Flour
- 3/4 Cup Organic Unsweetened Coconut Flakes
- 1 Tablespoon Lakanto Monk Fruit Sweetener
- 2 Eggs
- Coconut Oil for pan frying
Instructions:
How to Make Keto Pan Fried Coconut Shrimp:- In a small bowl mix the salt, Monk Fruit Sweetener, and coconut flour
- Create and an assembly line of three bowls, one with the flour mixture, the second with the eggs and the third with the unsweetened shredded Coconut
- Dredge the shrimp in the flour mixture, then in the egg and finally in the shredded coconut until well coated
- Fill a saute pan about 2 inches with coconut oil and put on medium high heat
- Once the oil is hot place shrimp in oil and cook 1-2 minutes on each side. Shrimp cook quickly so don't let them cook too long
How to Make Air Fryer Shrimp:
- In a small bowl mix the salt, Monk Fruit Sweetener, and coconut flour
- Create and an assembly line of three bowls, one with the flour mixture, the second with the eggs and the third with the unsweetened shredded Coconut
- Set air fryer to 380 F
- Cook for about 12 minutes or until shrimp are golden brown.
